I like to start the process with the carrot pickle so it can get its pickle on for as long as possible. The vinegar/acid addition to the sandwich is what makes it, in my opinion.
Next I marinade the meat. (The recipe calls for pork but I have also used chicken and it turned out just as well).
Then arrange your extras. The recipe calls for several additions to the sandwich but I stick with greens, lime and cilantro. Oh and pickled carrots of course.
Et voila! A dee-licious sandwich that really only takes about a half hour (with very little clean-up). Done and done.
Ok... pulled pork. The answer is always 'yes.' Followed by, 'more please.'
I've made several versions of pulled pork but I went for this recipe because the sauce was all-natural. Don't get me wrong, I LOVE the 'pour a bottle of barbeque sauce in and cook for 8 hours' versions, but I wanted to go for a non-corn-syrup-laden recipe just to see how it was. The verdict? REALLY spicy but also very delicious.
So that said... I personally would recommend slightly less chilli powder than called for. (To be fair not all chilli powders are created equal. Revision: add chilli powder to taste).
You can really do a lot with a pot full of pulled pork, I chose to add spinach and pile on top of ciabatta rolls.
